Chris Notap Rotisserie Chicken Soup

Ingredients

  • Part of a rotisserie chicken
  • 14 -16 cups of water
  • 5 good sized carrots
  • 5 celery sticks and leaves
  • 3 good sized onions
  • 1 1/4 cups pearl barley
  • 1 tablespoon Greek spice or Vegetable Spice
  • 1 1/4 tablespoons salt
  • 2 chicken broth cubes

Instructions

Place a rotisserie chicken (bone, skin and all) in a pot with 14 cups of water. Bring to a boil and let simmer for 30 minutes. Take the chicken out, pull all the meat and put it back in the pot.

Microwave all vegetables for 3 minutes on high to soften them. Put everything in the pot, give a good stir and cover. Let simmer for at least 30 minutes, then check ofter for the barley to be soft.
